I decided to make chicken soup, I haven't done so probably since last winter. My mom used to make it all the time. I really need to get in the habbit of freezing what I make so portions don't end up going bad... Maybe I'll add not wasting food to my quiet resolution list. So would you believe it, I made this soup a night ahead and would you believe I have the symptoms of a cold coming on, maybe it's all in my head.
SO since I ended up feeling stuffy, I decided to spice the soup up. I added a ton of red pepper flakes, lots of fresh ginger at the end, some lemon and a ton of cilantro. If I had a lime, I would have done lime and added some bean sprouts instead of beans. All of this was served over brown rice so it ended up being pretty hearty. Chris stuck to the simple version - straight chicken soup with rice.
I hope it does the trick, it sure tasted like it would!!!
