Happy New Years!!!






A new years breakfast fit for someone who may have partied too hard last night and woke up a bit foggy.  I heard that of course water is good, but also eggs and a bit of something salty.  The eggs have some enzyme in them that is supposed to help, and salt is supposed to help retain water so you don't get dehydrated.  
So to help my love I made pancakes with orage syrup and plain old scrambled eggs.













The pancakes are super simple


1 cup whole wheat flour
1 1/4 cup milk
1 egg
small lunch size container apple sauce, I prefer unsweetened
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon butter


Mix together everything until just wet DON"T OVER MIX and let sit while you heat a skillet or griddle on medium heat.  Butter the griddle and pour on batter.  When you see bubbles form on pancakes you know it's time to flip!


**TIP** the applesauce helps keep the pancakes moist and light



Top with orange syrup


Place in small sauce pan over medium heat the juice of one orange, 1 pat butter and about a quarter cup of pure maple syrup.  Cook until syrup thickens and serve over pancakes.  It's tangy and sweet and a nice twist on plain syrup.
